In brief
  • Clear chicken broth is cooked for 2–3 hours.
  • Noodles are boiled for 2–3 minutes, then cooled.
  • An egg is boiled for 6–7 minutes for a runny yolk.
  • Toppings are chosen to taste, without overpowering the broth.

Ramen, which has become a hallmark of Japanese cuisine, has long won the hearts of Asian food lovers around the world. Despite its seemingly complex nature, it is quite possible to prepare it at home if you know a few key techniques.

The main element of any ramen is the broth. For the chicken version, it is recommended to use chicken bones, first roasting them until golden, and then simmering in water with the addition of onion, ginger, garlic, and a small amount of soy sauce. Slow simmering for 2–3 hours allows you to extract maximum flavor from the bones and achieve a clear yet rich broth.

The chicken should be cooked separately to keep it juicy. The best way is to boil the fillet in the broth until done, then quickly cool it and slice it into thin strips. If desired, the chicken can be lightly sautéed in a pan with a small amount of oil to add a flavorful crust.

Ramen noodles are a special type of wheat noodle known for their chewy texture. It's important not to overcook them: drop the noodles into boiling water, cook for 2–3 minutes, then immediately transfer them to cold water to stop the cooking process and maintain elasticity.

The perfect egg for ramen is soft-boiled, with a runny yolk. Boil the eggs for 6–7 minutes, then place them in ice water, peel, and cut in half just before serving.

Toppings can vary: sliced green onions, bean sprouts, nori seaweed, corn kernels, pickled ginger, or even a bit of spicy chili sauce. The key is to choose ingredients that complement the flavor of the broth without overpowering it.

Assembling ramen involves several steps. Pour hot broth into a deep bowl, add the noodles, then top with pieces of chicken, halved eggs, and chosen toppings. If desired, you can garnish the dish with a drizzle of sesame oil or sprinkle with toasted sesame seeds.

A few tips can help improve the result: use fresh ingredients, don't skimp on the quality of soy sauce, and don't rush the serving – ramen is best enjoyed right away while the broth is hot and the noodles maintain their firmness.
