What to cook for dinner: quickly, simply, and deliciously

Seven in the evening. You stand in front of an open refrigerator, waiting for a ready plate to fly out like in a cartoon. It doesn't come out. And the question of 'what to cook for dinner' turns into a little personal drama: there's no strength, no imagination, and you want to eat right now. The good news is that a delicious dinner almost never requires two hours and a list of twenty ingredients. Most often, it takes about twenty minutes, one frying pan, and a couple of decisions made in advance.

I cook at home almost every day for about fifteen years. Not a chef, just an ordinary person who got tired of eating dumplings on weekdays. Below is what really works, without pretentiousness and without 'get farmer's shallots.'

Why is it so hard to decide what to cook for dinner in the evening?

It's not about laziness. By evening, your mind is simply overloaded — you've been making decisions all day, and there's no mental resource left for choosing between buckwheat and pasta. Psychologists call this decision fatigue, and simply put: your brain says, 'order sushi and leave me alone.'

The conclusion here saves more time than any life hack with slicing: the decision about dinner should not be made in the evening. In the morning, on a weekend, in line — whenever, just not at the moment when you're hungry and angry standing in front of the fridge. We have a separate breakdown on how to integrate such small decisions into your day — how to manage everything, without being hard on yourself.

Basic essentials: what to always keep in the fridge

A quick dinner starts at the store. If you have these items at home, you'll almost never find yourself in a deadlock:

  • Eggs. Queen of rescue operations. Omelet, shakshuka, fried eggs with anything — 10 minutes.
  • Pasta and rice. Last forever, cook quickly, get along with everything.
  • Frozen vegetables. Don't be snobbish: frozen broccoli and green beans are often healthier than limp fresh ones in January.
  • Chicken fillet or minced meat in the freezer. Better portioned right away, in flat layers — thaws in half an hour.
  • A can of canned beans and tomatoes in their own juice. Base for a dozen dishes.
  • Hard cheese, sour cream, garlic, lemon. This is not food, it's flavor enhancers. Without them, any quick dinner is bland.
  • Soy sauce, olive oil, paprika, oregano. Different spices — different dishes from the same ingredients.

That's it. This is not a 'gourmet set', it's insurance. With such a fridge, the question 'what to cook quickly' answers itself.

What to cook for dinner in 20 minutes: seven working ideas

No abstractions — specific simple recipes that I cook myself.

Pasta with garlic and whatever is available

While the spaghetti is boiling (8–9 minutes), chopped garlic is simmering in olive oil in a pan. You throw in any vegetables, cherry tomatoes, pieces of chicken — whatever you have. You transfer the cooked pasta directly into the pan with a ladle of the cooking water. This cloudy water is the secret: it turns the oil into sauce. Top with cheese. Total time 12 minutes.

Shakshuka

Onion, can of tomatoes, paprika, simmer for 7 minutes. Make four wells with a spoon, crack in the eggs, cover with a lid for 5 minutes. Bread on the side is a must. Dinner for two from three inexpensive ingredients.

Chicken in a pan in 15 minutes

Cut the fillet lengthwise into two thin slices (thick fillet is the main reason why chicken is dry on the outside and raw on the inside). Salt, paprika, 4 minutes on each side in a well-heated pan. Side dish - frozen vegetables in the same pan after the meat.

Vegetables and meat on one baking sheet

Potatoes, carrots, onions, pieces of chicken - all diced, oil, salt, spices, mix by hand directly on the baking sheet. 25 minutes at 200°C. Your involvement is five minutes, the rest is done by the oven. Wash one dish.

Asian-style rice

Yesterday's cold rice + egg + frozen vegetable mix + soy sauce, all in a hot pan for 6 minutes. Leftovers turn into a dish that looks like a restaurant order.

Quesadilla

Lavash or tortilla, cheese, leftover chicken, corn. Fold in half, fry on both sides without oil until crispy. Three minutes. Children eat in silence — and that is the highest praise.

Cream soup made from anything

Boil any vegetables, blend them, add cream or sour cream. Pumpkin, broccoli, cauliflower, zucchini — it works with everything. 20 minutes, and you feel like you're in a café.

More ideas and step-by-step options are in the section "Recipes", there are options for the weekends when you actually have time.

Tips that really save time

  • One pan. The more dishes, the less desire to cook tomorrow. Washing up is also part of dinner, we just forget about it while planning.
  • Cook in bulk. When boiling rice — boil twice as much. Tomorrow's dinner is already half ready.
  • Chop while it heats up. The pan heats up for 3 minutes — during this time, chop the onion and garlic. Don't stand over it.
  • Defrost in the morning. Moving meat from the freezer to the fridge — that's 10 seconds in the morning and minus 40 minutes in the evening.
  • Acid and fat at the end. A drop of lemon, a spoonful of sour cream or butter at the end — and a simple dish suddenly becomes delicious. It's not magic, it's chemistry.
  • Buy a decent knife. The only purchase that honestly speeds up cooking. A dull knife turns chopping vegetables into a punishment.

A weekly plan is not for perfectionists.

You don't need to outline 21 meals in a table. Just decide on Sunday: Monday — pasta, Tuesday — chicken with vegetables, Wednesday — soup, Thursday — rice, Friday — something lazy. Five words on a piece of paper. That's enough to not think at all in the evening, just open the fridge and do.

And agree with yourself in advance: one evening a week — 'no one cooks'. Delivery, sandwiches, cereal. No guilt. Dinner is not an exam.

Dinner and well-being: without fanaticism

Dinner is allowed and necessary. The rule of 'not eating after six' was not created for people who go to bed at midnight. Aim for 2-3 hours before sleep — this way, you sleep more soundly. Heavy fried food in the evening really does interfere with falling asleep, while protein with vegetables usually goes down easily.

If you are still active in the evening, dinner is even more essential — muscles need something to recover from. By the way, we have a sister article about home workouts: it follows the same logic — 20 minutes, no equipment, no heroism.

Cooking as relaxation, not as a duty

It sounds strange, but 20 minutes at the stove is often the only time during the day when your hands are busy and your mind is resting. Turn on music or a podcast. Chop the onion slowly. No one is rushing. A quick dinner is quick not because you are in a hurry, but because you are not complicating things.

And if the day was really tough, sometimes the best recipe is an omelet and something funny from the section ‘Positivity’. By the way, it works too.

So the next time the question arises about what to cook for dinner, don't look for inspiration. Look for eggs, garlic, and a frying pan. The rest will follow.
